Clover Club
Ingredients:
5 Raspberries
50 ml Posy - Pink Gin
15 ml Aubyn Blanc - Extra Dry Vermouth
15 ml Lemon juice
5 ml Simple Syrup (2 sugar, 1 water)
15 ml Aquafaba or Egg White
Method:
Muddle the raspberries at the bottom of the shaker, then add all other ingredients. Shake vigorously, strain, removing the ice and then return to the shaker. Perform a “dry shake” to emulsify the egg white or aqua faba. Fine strain into an elegant cocktail glass.
Garnish as desired.
